The perfect cake for this Summer: lemon, white chocolate chip

Happy Friday! I hope you had a nice week.

I know that in Italy the kids are done with school, here in Massachusetts we are not done quite yet, we still have a few days next week. I had a shock at the beginning of this week, because I thought that the school would be done today, but then while I was cleaning the bathroom and half listening to Aurora`s teacher talking to the kids, I heard her telling them that they would have a few days of school left this week and then a few more on the following week. Of course at the end of the school session I asked Aurora when the last day would be and she did not know! I have to admit that I was a little mad at Aurora, but then I realized that she is a kid and she must be tired too. She has been working hard on her assignments every afternoon with me, so I can`t get too mad!! The boys have been doing their online 30 minutes classes with their teacher and have been excited to talk about dinosaurs, they will be done with those too next week and hopefully their daycare will open soon, because they just told me that they can`t wait to go back to school and meet again their teachers and friends.

I don`t know about you, but during these quarantine days I have been trying to cook some new things, for examples every day I try to make a different pasta for the kids lunch with a different sauce, some days it is a success, some days it is a fail, but although I feel discouraged, I keep trying because what I want my kids to learn is that it is ok not to like some foods, the important thing is to try everything, then they will decide. Some sauces that they like are tomato sauce, pesto, pasta with broccoli (I just cook them with the pasta!), carbonara sauce (a big favorite!), tomato sauce with cream (called `pink sauce` by them), tomato sauce with ricotta (second version of the `pink sauce`), cream and ham (not a favorite).

Today I wanted to talk to you about a cake that I was kind of forced to try because I found out that I had a lot of soy yogurt that I bought by mistake and that nobody in my house would eat. So I found this recipe on my favorite cooking blog, you already know it, chiarapassion.com and tried it, because it requires a lot of yogurt! As always, I adapted it according to what I had available in the house and I got a delicious cake that the kids liked too (the first day they ate it and loved it, then as always they lost interest!). I found it very good and moist, perfect to eat with your morning coffee.

So here`s the recipe with my personal little changes:

LEMON SOY YOGURT CAKE WITH WHITE CHOCOLATE CHIPS

INGREDIENTS:

-220 g flour

-50 g potato starch

-100 g sugar

-3 eggs

-250 g soy yogurt (any kind of yogurt is ok)

-120 g seed oil

-2 tsp baking powder

-grated peel of one lemon

-juice of one lemon

-2 TBSP of your favorite jam

-1 cup white chocolate chips

Combine the eggs with the sugar, then whisk them at max speed until they are very fluffy, I use my stand mixer and I had it whisk for a couple minutes. Add the oil first and then the yogurt (you can use the same container and by adding the oil first, the yogurt will easily slide off the container and you won`t have to do it!), add the grated lemon peel, the lemon juice and the jam, which gives the cake the perfect consistency and combine everything. Add the flour, the potato starch and the baking powder and quickly stir until all the ingredients are well combined. Add the white chocolate chips, quickly stir again and place in a pan that you previously sprayed. Place in the oven at 350 F for around 40 minutes, but make sure to check with a toothpick before you turn the oven off, the toothpick has to come out clean. Enjoy!

I made this cake using a bundt cake pan, but I was thinking of trying it with muffins, the only thing that changes is the cooking time in the oven, I will keep you posted, but I think that my kids will like the muffins even more!
